마늘통닭 : Korean garlic fried chicken (maneul-tongdak) | Honeykki 꿀키

Today’s menu is something you can find at Korean traditional markets: garlic fried chicken. It’s basically crispy fried chicken topped with a heap of sweet garlic sauce. If it’s your first time seeing this, you may be shocked at the amount of garlic, but the garlic is not raw: the sauce in the garlic is fried with honey so the spicy flavor is mellowed and sweetened; perfect with fried food! But do make sure to brush your teeth after eating this! Usually this dish is fried in a large Korean cauldron, but since I don’t have a cauldron, I used the largest pan/pot I own. TBH I filmed this twice; there was an issue with the setup so the sound wasn’t recorded. However, I was really glad to taste this yummy garlic fried chicken twice! Ingredients (1cup = 200ml) Garlic sauce: 1cup garlic, 50ml olive oil, 1/3tsp salt, 2~3Tbs honey, juice of half a lemon(*optional) Fried chicken: 2 chickens, salt and pepper, some frying batter mix Large chickens are hard to cook evenly. I used 800g chickens; feel free to use smaller ones. Method 1. Cut away unwanted bits like the ends of the wings and excess fat using scissors. 2. Use scissors to cut along the middle of the chest; bend the joints of the legs and wings backward for a flatter-shaped chicken. 3. Wash thoroughly under running water and score the breasts and legs so that the meat can cook evenly. 4. Season the whole chicken with salt and pepper and marinate for 30 minutes. 5. Let’s make the sauce while the chicken is soaking up the flavors. In a pan, fry 1 cup garlic in 1/4 (50ml) olive oil. 6. Once the garlic starts to cook, add honey and salt; reduce on low heat for 5 more minutes. 7. Evenly coat the marinated chicken with frying mix. 8. Fry both sides of chicken in oil preheated at 160 °C for 6 minutes. Take out the chicken, heat up the oil to 180 °C and fry both sides for 8~9 minutes. 9. Drain excess oil on a sieve, cut into bite-sizes and serve on a grill pan. Finish off with a load of garlic sauce.
