Ingredients Boiled potatoes – 5 medium-sized Oil – 2 tablespoons Cumin seeds – 1 teaspoon Asafoetida – 1 pinch Green chilies – 2 (finely chopped) Ginger – 1 inch (grated) Turmeric powder – 1/2 teaspoon Red chili powder – 1 teaspoon Coriander powder – 2 teaspoons Cumin powder – 1/2 teaspoon Amchur powder – 1 teaspoon Garam masala – 1/2 teaspoon Salt – to taste Green coriander – 2 tablespoons (finely chopped) Recipe First, peel the boiled potatoes and break them lightly with your hands. This enhances the flavor of the dish. Heat oil in a pan. Once the oil is hot, add cumin seeds. When the cumin seeds begin to crackle, add asafoetida, green chilies, and grated ginger and fry for 30-40 seconds. Now add turmeric, red chili, coriander powder, and cumin powder. Stir-fry the spices over low heat for 15–20 seconds. If needed, add 1–2 tablespoons of water to prevent them from burning. Now add the chopped boiled potatoes and mix well with the spices, ensuring all the potatoes are thoroughly coated. Next, add salt, dry mango powder, and garam masala and fry over medium heat for 4–5 minutes. Stir occasionally until the potatoes turn slightly golden and spicy. Finally, add the finely chopped coriander leaves and mix well. Your delicious, quick, spicy boiled potato curry is ready.
