Matcha Kuromame Butter Sandwich Cookies｜Ohyoo Cooking

[Recipe · Matcha Sandwich Cookies] Unsalted butter···70g Powdered sugar···35g Sea salt···0.5g Egg yolk···1 (about 17g) Cake flour···110g Matcha powder···9g [Filling] Unsalted butter···90g White chocolate···50g Kuromame···as needed [Baking Time] 165°C/329°F···12-14 minutes [How to Make] ① For the matcha cookies, cream softened unsalted butter until smooth. Add powdered sugar and sea salt, mix well. Beat in egg yolk until well combined. ② Sift cake flour and matcha powder together, then add to the butter mixture. Mix until a dough forms. Roll out to 3mm thickness and refrigerate for 2 hours. ③ Remove dough from refrigerator. Cut into 3×7cm rectangles and bake. Let cool completely. ④ For the filling, beat unsalted butter until smooth. Add melted white chocolate and mix until well combined. Transfer to a piping bag. ⑤ Pipe filling onto one cookie, add kuromame, then pipe filling onto another cookie and sandwich them together. Freeze for 15 minutes before serving.
