EDIT: There's some incorrect information in this recipe - we're going to be re-doing this video in about a month. So we wanted to teach you how to make homemade Chinese dumplings from scratch. There's a million different varieties of dumplings, so we wanted to zero in on the North China-style, in particular a heftier variety of boiled dumpling that's popular in Beijing. First, we'll show you how to make the dough, and follow up with the filling 3 ways: first, one with pork and leek; then, one with beef and fennel; and finally, one with eggs and jiucai (Chinese chives).
