We are in Puglia, in Acquaviva delle Fonti, where the red onion of Acquaviva is grown. Here’s an interesting fact: the name “Acquaviva delle Fonti” comes from the abundance of fresh, crystal-clear water flowing from an underground aquifer just 9 metres below the surface. In this video, we meet 82 years old Isa who prepares a traditional dish: onion calzone. Isa tells us how her mother made these calzoni for workers during the olive harvest.
