Sauté onions in olive oil, add minced meat and cook until crumbly. Stir in tomato sauce, parsley and spices. Sprinkle a casserole dish with olive oil and breadcrumbs, layer eggplant and minced meat, sprinkle with Parmesan cheese and bake for 15 minutes at 180°C. Serve with a creamy dill and cucumber sauce. 🍆 VIDEO 2 (from 10:22): Stuffed Eggplant Muffins with Mozzarella & Asian Coleslaw 📌 RECIPES: Eggplant – 1 pc Mozzarella – 80 g Parmesan – 30 g Egg – 1 pc White bread – 2 slices Milk – 50 ml Spring onions Garlic – 2 cloves Breadcrumbs – 2 tbsp Olive oil Italian herbs, paprika Salt, black pepper For the coleslaw: White cabbage Carrot – 1 pc Spring onions Sesame seeds – 1 tbsp Soy sauce – 1 tbsp Olive oil – 1 tbsp Lemon juice (½ lemon) Honey – ½ tsp Ground ginger – ½ tsp 👩🍳 QUICK PREPARATION: Dice the eggplant, salt it, let it sit for 15 minutes and pat it dry. Sauté garlic in olive oil, fry eggplant until golden brown. Soak bread in milk, mix with egg, Parmesan cheese, breadcrumbs, spices and eggplant. Place half of the mixture into a greased pan, cover with mozzarella, add the remaining mixture and bake for 45 minutes at 180°C. For the salad, grate the cabbage and carrot, then press them soft with your hands.
