Making Yogurt in a Wide Mouth Thermos

Brief Summary of Instructions • Heat milk to 180°F. • Hold it at 180°F for 10-20 minutes. • Cool the milk to 115°F. • Mix 1 Tbs of yogurt starter with about ½ cup of 115°F milk for each quart/liter of milk. • Mix the small amount of starter and milk into the pan of milk. • Pour the milk into the wide mouth thermos and close tightly. • Incubate for 7-8 hours. Incubate longer if you like your yogurt more sour or want less lactose. • Refrigerate the yogurt. If you leave the yogurt in the thermos, be sure to take the top off so the cold gets to the yogurt. Alternatively, you can transfer the yogurt to another container to cool it.
