This video is about: • slow living in a big city • life as a solo woman over 50 • Christmas in London • architecture and mindful walking • food, traditions, and home rituals • calm, simple happiness Sit back, relax, and enjoy this slow, meaningful Christmas day in London ✨ 🍰Spiced Orange & Gingerbread Bundt Cake🍰 Ingredients For the cake: 345g plain flour ½ tsp bicarbonate of soda 1 tsp baking powder ½ tsp fine sea salt 1¼ tsp ground ginger 1 tsp ground cinnamon ¼ tsp ground nutmeg ¼ tsp ground allspice Zest of 1 orange 225g unsalted butter, browned and slightly cooled 300g dark brown sugar 4 medium eggs, room temperature, lightly whisked 240ml buttermilk 120ml black treacle 1–2 tbsp dark rum or brandy (optional) For the mascarpone glaze: 200g mascarpone 100g icing sugar, sifted 1–2 tbsp maple syrup or honey 100g double cream (as needed for texture) Pinch of fine sea salt ½ tsp vanilla extract or a little orange zest 🍰Method🍰 Preheat the oven to 175°C (fan 160°C). Grease and flour a 10-cup (2.4L) bundt tin, tapping out any excess. Blend the dry ingredients: In a medium bowl, whisk together the flour, bicarbonate of soda, baking powder, salt and all the spices. Stir through the orange zest. 🍰Brown the butter:🍰 In a small saucepan, melt the butter over medium heat until golden brown and nutty, with tiny amber flecks at the bottom. Set aside to cool slightly. (Optional: stir the spices into the warm butter to deepen the flavour.) 🍰Mix the wet ingredients:🍰 In a large mixing bowl or stand mixer, combine the brown sugar, eggs, cooled brown butter, buttermilk, treacle and rum (if using). Mix on low speed until smooth and glossy. 🍰Combine:🍰 Add the dry ingredients to the wet, mixing gently until just combined. The batter should be thick and pourable — do not overmix. 🍰Bake:🍰 Pour the batter into the prepared bundt tin and smooth the top. Bake for 45–50 minutes, or until a skewer inserted into the centre comes out with a few moist crumbs. 🍰Cool:🍰 Leave to rest in the tin for 10–15 minutes, then carefully invert onto a wire rack or cake stand. Allow to cool completely before glazing. 🍰Mascarpone glaze🍰 In a bowl, whisk together the mascarpone, icing sugar, maple syrup or honey, salt and vanilla (or orange zest). Gradually add the double cream until you reach a thick but pourable glaze.
