Preparing this dignified student classic takes little time and requires only a few more ingredients besides pasta, tomato, and fish. Watch the video for step-by-step instructions. Ingredients (serves 4) 320g spaghetti 1 onion 2 garlic cloves 1 dried red chili pepper 2 tablespoons capers 250g tomato puree or passata 2 tablespoons pitted (or unpitted) black olives 200g piquillo peppers (or other red ones) 2 cans of tuna or bonito in oil (80g each) A few fresh basil leaves Olive oil Black pepper Salt Preparation 1. Heat plenty of salted water in a saucepan. 2. Place a generous amount of oil in a frying pan over medium heat. 3. Slice the garlic and add it to the pan along with the chili pepper. 4. Meanwhile, julienne or finely chop the onion. 5. When golden brown, remove the garlic to a plate lined with kitchen paper and discard the chili pepper. 6. Add the onion to the pan with a pinch of salt and pepper and increase the heat slightly. Make sure it doesn't burn by stirring occasionally. 7. When the water boils, cook the spaghetti for one minute less than the manufacturer's instructions. 8. Chop the peppers. 9. When the onion is soft and golden, add the piquillo peppers and tomato, and let it cook for about four minutes. 10. Add the olives, capers, tuna, and the basil leaves, torn by hand, and mix. 11. Transfer the drained pasta from the pot to the pan along with a ladleful of the cooking water (three or four tablespoons), and stir well for a minute. 12. Season with salt and pepper and serve with the garlic on top.
