How To Make PALM SUGAR in Cambodia | Traditional Cooking SUGAR PALM

I used to see my villagers in Kampong Speu climbed up palm tree to collect palm water/juice for making palm sugar about 30 years ago. I can see it again today at Kampong Chhnang Province when Mr. Koko, our friend at Sala Lek Pram brought us to his neighbor who's a palm water/juice collector for making palm sugar. This man climbed 12 palm trees to collect the juice for cooking boil to make palm sugar. This much of palm water can only produce around 9kgs of dried palm sugar.
