Let the veal cool in the stock. Strain the veal stock through a fine sieve. Stir the tuna sauce with a little of the veal stock until smooth. Remove any fat and tendons from the meat and slice it paper-thin against the grain. Arrange the meat loosely on a plate, coat with the marinade, and garnish with capers, parsley, and diced tomatoes.
