This recipe is by Kiyomi Mikuni, the owner and chef of the French restaurant "Hotel de Mikuni" in Yotsuya, Tokyo. Beef steak with green pepper sauce Steak au poivre vert [Ingredients] 1 serving 1 beef fillet steak Salt and pepper to taste 2 teaspoons olive oil [Sauce] (easy to make amount) 2 tablespoons red onion 1 tablespoon GABAN salted green pepper 1 tablespoon cognac 100cc HEINZ fond de veau 100cc fresh cream 1 tablespoon unsalted butter Salt to taste [Preparation] Finely chop the red onion. Lightly crush the green pepper. [Procedure] 1. Grill the steak and set aside. 2. Heat butter in the same frying pan and fry the red onion and green pepper without letting them brown. 3. Add the fond de veau, bring to a boil, and reduce. 4. Add the cream and cognac to finish, and season with salt. ◎Bon appetit!
