We thought we were getting close to launching pizza at our brewery… then we discovered a major problem. In this video, I take you behind the scenes as we work through a critical issue with our pizza kitchen. Our ovens are producing incredible pizzas, but once we push temperatures high enough to achieve the crust and cook we’re looking for, we run into a serious ventilation problem that could delay our launch and cost far more than we anticipated. To figure out a solution, I meet with Tony, our HVAC specialist, and Don Foisy, who manages the property, to evaluate the situation, discuss potential fixes, and determine what it will take to get this kitchen operational.
