Remove from heat, add 1 1/2 tablespoons of unflavored gelatin powder, hydrated and dissolved in 60 ml of water, and mix well. Set aside. TIP: Soft candy stage is when you add 1 teaspoon of syrup to cold water and the syrup hardens slightly and remains pliable when squeezed between your fingers. In a mixer, place 3 egg whites and 1 teaspoon of vanilla extract and beat well until stiff peaks form. With the mixer running, add the syrup and gelatin in a thin stream and continue beating until stiff peaks form (+/- 1 minute). Turn off the mixer.
