Extracting Honey with a Honey Extractor Extracting honey and other work not directly related to bees should be done in a closed area, inaccessible to bees. When extracting honey, first remove the drum from the honey extractor, thoroughly wash it with hot water, and wipe it dry. Lubricate the friction parts of the honey extractor (axles and gears) with honey. Secure the cleaned honey extractor in a wooden crosspiece to prevent it from wobbling during operation. The room used for extracting honey should be kept at a temperature below 25°C, as at lower temperatures, honey becomes thicker, its viscosity increases, and it is more difficult to extract from the combs. For the same reason, honey fresh from the hives is extracted more easily and completely than honey that has been stored in the apiary and cooled to the ambient temperature. In dry years, honey can be especially thick: it can only be extracted in a room heated to 30-33°C. Thick heather honey is also extracted only when warmed. The honey is uncapped using a knife heated in hot water. Special knives with curved handles are used, allowing for easy removal of the caps from the surface of the comb. For smooth operation, two knives are required—one for uncapping, while the other is heated in hot water. When uncapping the honeycomb, the frame is supported with the side bar on the table, with the top bar facing you and the knife moved upward, aiming to capture only the caps without damaging the cell walls. The caps are periodically removed from the knife and dropped into a container with a mesh screen. Any uneven areas of the comb are also trimmed. The knife must be thin, sharp, and hot enough to remove the caps without bending the cell walls. When selecting honey extractors, use combs of equal weight, if possible; this will ensure smoother rotation and less wobble. You can also place combs of similar weight on opposite sides to counterbalance each other. First, rotate the extractor slowly, then turn the combs and extract the remaining honey from the other half. Then, turn the combs over again and extract the remaining honey from the first half. Freshly built combs break easily in the extractor. Therefore, frames with such combs are placed close to the cassette mesh so that all parts of the comb rest on the mesh; the extractor is rotated more slowly. Dark combs, being more durable, can be extracted at any speed. When extracting from the combs, bits of wax, accidentally trapped larvae, and bees fall into the honey. To remove these, a strainer is hung on the extractor tap to catch any large solids. It's best to have two strainers for replacement; they should be cleaned and rinsed periodically in hot water. The honey is poured into settling tanks, which are covered with gauze or metal mesh. Immature, watery honey can easily be transformed into mature, thick honey by storing it for 7-10 days in an open container in a dry (or hot), ventilated room. It's best to use a flat container with a large evaporating surface. After 4-5 days, the honey will settle and can be poured into permanent containers for storage and transportation. Heather honey, due to its high viscosity, cannot be extracted from the combs when ripe. It is extracted before ripening, immediately after the combs are full. At the end of or after the honey flow, the honey should be extracted using a honey extractor only in a room inaccessible to bees, taking all precautions against theft. When the honey flow ceases, bees persistently search for honey sources; they are attracted by the smell emanating from empty wax foundation or a container of sealed honey.
