Join Thomas Straker at Daylesford Organic as he cooks a turkey roast lunch for the farmers and gardeners who grow the food. Before the cooking begins, Thomas talks with Richard Smith about the impact of avian influenza, which is sweeping the country and making life harder for those raising turkeys and chickens. It’s a reminder of the realities behind the food on our plates. From there, we head into the Market Garden to harvest beetroot, celeriac, and leeks, before starting the prep that sets us up for the following day. What follows is a long, unhurried cook: a proper roast turkey, crisp roast potatoes, rich gravy, bread sauce, cranberry sauce, and beetroot and celeriac in white sauce — classic food, cooked with care and time. This is a roast made to be shared, cooked as a thank you to the farmers and gardeners at Daylesford who have worked tirelessly over the past year and let me be a small part of it.
