Eleven years later, the same agency was telling those same women that home preservation was, and I am quoting the 1969 revision now, a serious risk to family health. Nothing in the chemistry had changed. The science had not been overturned. What changed was that General Foods, Swift, and a handful of grocery chains had figured out how to sell the housewife back the very thing she used to make for free.
