Convection oven roasted peppers are a fresh, quick and very tasty side dish or main dish. To make this recipe for roasted peppers, you don't need any special cooking skills, so if you want to prepare an excellent side dish of peppers or, I repeat, a main dish with these wonderful grilled peppers, wash your hands and start cooking right away! INGREDIENTS 2 large red peppers 2 tablespoons of extra virgin olive oil 1 clove of garlic 2 basil leaves Salt to taste Hot chili pepper (optional) Clean the peppers with a wet cloth (avoid washing them since they will already release a lot of vegetation water). Preheat the oven for at least 15 minutes at 200°C and then place the peppers on a baking tray or on a baking tray lined with baking paper and leave them to cook for about 30 minutes (depending on their size) always at 200°C in a fan oven. Turn the peppers at least 3 times, once every 10 minutes and when they are ready, turn off the oven, remove them and let them cool in a colander with a plate underneath (they will still release water) for at least 10-15 minutes. In the meantime that the peppers are cooling, finely chop a clove of garlic, put it in a small bowl and add extra virgin olive oil, some basil leaves torn by hand, fine salt and if you prefer (I do :D) a little ground hot chili pepper and mix everything well with a fork. Take the peppers and start peeling them by pinching them, remove all the skin and as they break and open, remove the seeds with your fingers. Once all the seeds have been removed, break the peppers by hand and put them back in a colander with a plate underneath so that they can drain for at least ten minutes. After at least 10 minutes, put a little seasoning on the base of the container or plate in which you will leave the roasted peppers, then add the peppers, the remaining seasoning and mix everything well! The oven-roasted peppers are ready, now, if you are wondering how to preserve grilled peppers, well, know that if covered in oil, you can keep them in the fridge for up to 3-4 days!
