San Sebastian cheesecake originated in a Basque bar called La Viña on Calle 31 August back in 1990. It has recently gained immense popularity, and in 2021, the New York Times named it dessert of the year. There's always a line at the bar. It's best to arrive right before they open at 11:00 a.m. You might not get any cheesecake that evening. The San Sebastian cheesecake recipe is quite simple, but the result depends on the cream cheese/curd cheese you use. Ideally, it should be slightly salty. That's why I add soft goat cheese to the cream cheese.
