What makes the best iSUP for surfing?

With well over a hundred brands in the iSUP world, and pretty much all of them making inflatable SUPs for surfing, there really is a colour and price point board for everyone. But what is the different between an iSUP that catches waves and an iSUP that really rides waves?!
