Whip the egg whites until stiff peaks form. In the yolk bowl, add 250g of mascarpone and sugar (I eyeballed it but put about 1 or 2 tablespoons), mix everything thoroughly until there aren't any clumps left. Then mix the egg whites GENTLY in the yolk/mascarpone mix. Once everything is smooth, put it to the side. Strawberry syrup: dice the strawberries, add them to a bowl with sugar (one tablespoon is enough) and then mix it and set aside for 1h. Strain the syrup. (if there isn't enough syrup to dip the biscuits in/ it's too thick; just mix a couple strawberries with a blender and add some water and sugar and add it to the syrup) Then you just assemble everything: first dip the biscuits in the strawberry syrup (long enough so it's not dry), then do a first layer of biscuits, add the mascarpone cream, add diced strawberries (from the syrup making), then add another layer of biscuits and on top a layer of mascarpone and you're done!
