When is the best time to harvest? There are two important changes you can notice in bean plants: the color of the leaves and the color of the bean pods. The leaves change color from yellowish-green to yellow, while the pods change color from green to another color depending on the bean variety, which can range from creamy white to red, purple, or creamy white with speckles. These changes indicate that the bean plants are ready to harvest. How do you harvest or pull up the bean plants? There are two ways to harvest. The first, or traditional pulling, involves uprooting the plants from the ground. The second involves cutting the plants flush with the ground using a sickle, pruning shears, or a machete. Harvesting this way avoids leaving clods of soil. After starting, the plants should be placed in the shade, either in the yard or corridor, to reduce damage to the seed caused by heat or humidity.
