The Amish Onion Method That Grows 200 Bulbs in 4 Square Feet

I want to tell you about something that still kind of embarrasses me, even after all these years. For the better part of two decades, I grew onions the way I figured everybody grew onions. I'd take my little onion sets, those dried-up bulbs you buy in a mesh bag at the garden center, and I'd press them into the dirt one at a time, four inches apart, six inches apart, all down a long row. And I mean a long row. I'd be out there in late April, July heat already creeping in some years, knees in the mud, mosquitoes working on the back of my neck, those papery onion tops scratching my forearms while I bent over for what felt like a hundred feet of garden bed.
