PizzaMaster® Training and Support Video 5: CLEANING WINDOWS AND MAINTENANCE
In this video we’ll share some key cleaning tips to make the most of your PizzaMaster oven. One of the unique features that sets PizzaMaster ovens apart are the big glass windows that let you see your pizza baking. This saves energy by letting you check on the product without opening the door, and also allows the pizzas to bake quicker. If you’re going be able to see the pizzas through the windows it’s important to clean the windows every day. The cleaning must be done at a time when the oven is completely cooled down, so most PizzaMaster operators clean the windows first thing in the morning before baking starts for the day. Start with a light to medium duty cleaning pad, like this Heritage 50716 from PizzaMaster. Any cleaning pad that’s not too abrasive will do. For example, many of our customers use light duty Scotch Brite cleaning pads (like Scotch Brite number 98). As you may know, you should never put cleaning products on your stones or inside the oven. That’s why we never spray onto the window or near the oven. Instead, you should spray your favorite commercial degreaser directly on your cleaning pad. Use the pad to apply the degreaser liberally to the windows, then let it sit for 3 or 4 minutes to break down the grease. Once it’s had a chance to set, lightly scrub the window with your cleaning pad, then wipe it down with a cold water rag and the grease will wipe off. You should not let the grime build up over days and weeks; instead, stay ahead of the buildup by cleaning the windows every morning. Since you can’t use cleaning products inside the oven cavity, it’s also important to brush out the debris on your stones frequently as your baking day progresses. You should use a brass metal brush inside the ovens, rather than a harder wire brush, so you don’t damage the stones. A quick tip to make this easier is to pull out the stainless steel utility shelf, brush out the oven onto the shelf, and then sweep from there into a trash can so you don’t get pizza debris all over your floors. Another great feature of PizzaMaster ovens is that they’re on 5-inch casters, so you can easily move the oven out as needed to get to the back of the oven for cleaning and maintenance. And when you do need to complete maintenance, all of your components can be accessed through the side cavity just by removing 6 screws on the side panel.
