The most likely explanation for the name is that it comes from the sound "biang biang" made when the artisans stretch the dough with both hands and slap it on the counter. And what surprised us most was the length of the noodles. Even when lifting them with chopsticks, they seemed to go on forever; they were longer than we imagined. The incredibly difficult kanji, the unique preparation method, the extra-long noodles... We enjoyed the visually and gastronomically impactful Biang Biang Noodles in a relaxed atmosphere.
