Every day, she starts from scratch by assembling the entire food stall before opening for business. Once the doors open, she welcomes customers with a warm smile and heartfelt hospitality. One of the stall's signature dishes is its handmade chicken meatballs (tsukune), carefully prepared by hand and served with a variety of sauces, including honey mustard, spicy cod roe mayonnaise, and grated daikon with ponzu. The menu also features comforting Japanese oden simmered in a rich broth made from chicken stock and traditional Japanese dashi, Fukuoka's famous Yaki Ramen, and tender pork trotters slowly braised for three hours in ramen broth. For the owner, however, the goal is about more than just serving delicious food. She wants every guest to experience the unique atmosphere of a Japanese yatai.
