Made with gigantic cow bone marrow and slow-cooked overnight, the marrow melts down into a rich, flavorful gravy. In the morning, they add fragrant basmati rice straight into that same pot, soaking up all the flavor. The result? An incredibly bold and aromatic pulao that represents the heart of Pakistani cuisine. I visited a small gem in Dubai’s Satwa area a place called Kabab Al Madina Cafeteria, where I met the talented Pakistani chef who walked me through the whole cooking process.
