The best thing about it is that it's also very quick and easy to make, as the base is a sponge cake batter. You can serve it with powdered sugar or cover it with melted chocolate. And if you've been wondering how the characteristic pattern is created: The dark batter is layered on top of the light batter in the loaf pan and then folded in with a fork. This gives the cake its typical marbled texture, which gives it its name. -------------------------------------------------------------------------------------------------------------------- Marble Cake - A Classic Ingredients: 5 egg whites (medium; room temperature) 150g sugar 1 pinch of salt 250g butter (softened) 100g sugar 1 tsp. Vanilla paste or 1 sachet of vanilla sugar 5 egg yolks (medium size; room temperature) 200g flour 50g cornstarch 5g baking powder 30g unsweetened cocoa powder approx. 125ml milk A little powdered sugar for dusting or chocolate coating for coating Preheat oven to 170°C (top and bottom heat). Grease a loaf pan (size 29x10x8) and dust with a little flour. Instructions: 1. Beat the egg whites with salt until light and fluffy, then gradually add the sugar while stirring constantly. The egg whites should be stiff, but not too dry or too hard. 2. In another bowl, beat the butter with the sugar and vanilla paste until light and fluffy. Then stir in one egg yolk at a time. 3. Stir some of the egg whites into the butter mixture. Then gradually fold in the rest. 4. Mix the dry ingredients (flour, starch, and baking powder) and gradually fold into the butter and egg mixture. If necessary, you can fold in a little more milk if the batter is too thick. 5. Pour half of the batter into the greased loaf pan. 6. Sift the cocoa powder and stir in a little milk until smooth. Mix with the remaining batter and pour the batter onto the white batter in the pan. Use a fork to stir the batter in a spiral pattern from top to bottom to blend the two layers. 7. Bake in the oven on the middle rack for 50-60 minutes. It's best to do the toothpick test to check if the cake is done. 8. Let the finished cake cool in the pan for 5 minutes, then turn out onto a wire rack and let it cool completely. To serve, dust with powdered sugar or drizzle with melted chocolate.
