A brief method using oil is included below (oil extraction not included in video). You can use the annatto extract in foods such as stew chicken or when making the meat/filling for pastelles, or any other dish that requires it. TIME STAMPS-- 00:00- Introduction 00:03- What is Roucou / Oucou / Annatto? 00:42- Many different ways to prepare Roucou 01:04- Removing the seeds 03:27- Making Roucou using Water 06:26 - Storing 06:42- Finished Product INGREDIENTS FOR WATER EXTRACTION-- 1 bunch of Roucou (Annatto) 1/2 cup to 1 cup tap water (or hot water) 1/2 teaspoon to 1 teaspoon salt Small Spoon Wide bowl Gloves (recommended) Air-tight container for storage INGREDIENTS FOR OIL EXTRACTION-- 2 Tablespoons Roucou or Annatto seeds 1/4 cup vegetable oil 1) Combine Roucou (Annatto) seeds and oil in a saucepan over low to medium heat. 2) When bubbles start to form around the seeds, take off fire and remove from heat. 3) Leave seeds to soak in the oil for 2 minutes. (DO NOT LEAVE LONG since seeds will produce a bitter taste) 4) Using a filter and bowl, strain / filter out seeds and collect oil. 5) Store in an air-tight container.
