Cook the potatoes in salted, barely simmering water. Drain, let cool, peel, and slice. Season the crème fraîche with salt and pepper, then add a little nutmeg. Roll out the pastry, line a baking pan, prick the bottom with the tines of a fork, and pre-bake for 5 minutes in a hot oven. Remove from the oven. Cover the bottom with a little sliced ​​Chavignol goat's cheese. Then arrange the potato slices on top, alternating with the remaining goat's cheese. Finish by pouring the crème fraîche over the top. Return to the oven for 15 minutes.
