The highlight of this recipe is that the Huevos Rancheros are served on top of a tostada smeared with refried beans, then generously topped with my delicious salsa, avocado, and queso fresco. When I'm hosting several guests and short on time, I like to prepare the salsa and refried beans in advance. This way, all I need to do is fry the tostadas and cook multiple eggs on my griddle, allowing me to serve everyone at once.
