Assalamu'alaikum... this time I made pandan roll cake filled with chocolate sprinkles and cheese using an economical recipe and an all-in-one method. Only 4 eggs, the result is incredibly soft and delicious, especially the pandan-scented cake. The sweetness is just right and there's a savory touch from the cheese. A few tips to keep the roll cake moist, easy to roll, and the crust crispy and non-peeling: 1. Make sure the ingredients like eggs and baking powder are at room temperature. The eggs must also be fresh (the egg whites are still thick, the yolks are still round). 2. Mix for exactly 5-7 minutes, using high speed, and don't lift the mixer often to ensure the small pores are smooth. 3. Add the margarine. Make sure the margarine is lukewarm, almost cold. Use the paddle technique, and stir the mixture slowly, but make sure to stir thoroughly so that no margarine settles at the bottom. 4. Baking: This depends on your oven, so you'll need to experiment often. I place the baking sheet on the middle rack. Make sure the oven is preheated to 230°C for 5 minutes before the dough goes in. Once the dough is in, I use 200°C on top and bottom heat for 3 minutes. Then, after 3 minutes, I lower the temperature to 190°C on top and bottom heat for 17 minutes. With proper baking, God willing, your roll cake will be soft and supple and won't break easily. If using a perch oven, place a small amount of water on the bottom of the oven and then use high heat.
