Squash casserole is a classic Southern side dish that is fantastic on any Sunday table. This recipe really allows the squash to shine. Ingredients 2 1/2- 3 lb squash 1 large sweet onion 3-6 tbsp of butter ( add 3 tbsp of melted butter to the drained squash for added richness if desired.) salt ( to taste) pepper (to taste) 1 1/2 tbsp sugar 1 sleeve ritz crackers 2 eggs 1/2 cup whole milk 1/4 cup sour cream Note: 2 cups of cheese can be added to the top.
