Beet Hummus - A healthy alternative to regular hummus

This beet hummus recipe is an antioxidant rich and beautiful dish that is sure to be a hit at your next gathering. It's delicious, bright, and vibrant. The most widely researched and medicinal compounds in beets are betalains, shown to provide antioxidant, anti-inflammatory and detoxification support. Scientist have identified these compounds have the ability to fight tumors in the body. Beets increase nitric oxide in the body which dilates blood vessels and lowers blood pressure. Lutein and zeaxanthin are two carotenoids found in the greens of beets but not in the roots. Save the greens to toss in the skillet or put in a salad or smoothie to gain vitamins, minerals, folate and carotenoid benefits of disease prevention, especially eye health! _______________________________________________________ INGREDIENTS 3 small beets 2 Tbsp olive oil 1 Tbsp avocado oil 1 15oz can of cooked Garbanzo Beans (Eden Brand) Zest of 1 lemon 1 tbsp of lemon juice 1 tsp cumin power 2 garlic cloves 2 tbsp tahini ¼ cup olive oil ½ cup water Salt and Pepper to taste ________________________________________________________ INSTRUCTIONS For the Roasted Beets Chop all the beets into 1/2 in cubes, drizzle 1 Tbsp olive oil and 1 Tbsp avocado oil to coat and season with a few pinches of salt. Preheat oven to 350F and cook for 30 minutes until tender. Let chill to room temperature. For the Hummus Add all ingredients into a food processor except water and olive oil. Process all ingredients until chunky, then slowly add water until texture is smooth. Process again and drizzle olive oil in until the texture is smooth and velvety.
