Cook the pasta in a large pot of salted water. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining. 2. In a saucepan or skillet, heat the olive oil over medium heat. 3. Add the minced garlic to the olive oil and cook for about 1-2 minutes. 4. Stir in the chopped walnuts and cook for another 2-3 minutes, until the garlic becomes the color of the walnuts 5. Add the parsley and red pepper. 6. Add the cooked spaghetti to the mixture, tossing it to coat it in the garlic and walnut mixture. 7. Season with salt and black pepper to taste. 8. Plate the pasta and sprinkle with Parmesan cheese. Pasta Recipe: 2 cups all-purpose flour 3 large eggs ½ teaspoon sea salt 2 tablespoons extra-virgin olive oil Directions: 1. Make a nest of flour on a clean work surface and make a depression in the center. 2. Add the eggs, olive oil, and salt to the center depression. 3. Use a fork to break up the eggs, keeping the flour walls intact. 4. Bring the flour inward towards the center to incorporate all the ingredients together. 5. Once you have a ball of dough, knead the dough for 8 to 10 minutes until it becomes cohesive and smooth. It will take a while, and you will not think it will ever come together… then it does. Also, you can add a little moisture if it seems to dry by wetting your fingertips as you knead it. 6. Shape the dough back into a ball, wrap it in plastic wrap, and let it rest at room temperature for 30 minutes. 7. After 30 minutes, split the dough into four pieces. 8. Using a rolling pin, roll out the dough on a lightly floured surface until it's as rectangular and thin as you can possibly get. If you have a pasta roller or mixer attachment, you can use it to make your life simpler, or do it by hand… the time-honored and old-fashioned way. 9. When it is the desired thickness, lightly flour the top of the dough and roll it up loosely like a kolachi/nut roll or pumpkin roll. 10. Slice it like you would a nut roll or pumpkin roll to make your individual pasta strands/noodles. 11. You can cut it into whatever shape you want: spaghetti, fettuccine, ravioli…you name it. 12. Use your fingers to fluff and separate out the strands/noodles. 13. Repeat with remaining dough. 14.
