Brita Cake Recipe Yield: 10 slices (video size) Ingredients For the Sponge Cake Base Butter: 150g (softened at room temperature) Sugar: 150ml Egg yolks: 4 Flour: 200ml Baking powder: 2 teaspoons Milk: 150ml For the Meringue Egg whites: 4 Sugar: 200ml For the Filling & Topping Heavy cream (whipping cream): 400ml Sugar: To taste Your choice of fruits: As needed (e.g., strawberries, raspberries) Instructions Step 1: Prepare the Cake Batter Cream the room-temperature butter and sugar together until light and fluffy. Add the egg yolks one at a time, mixing well after each addition. In a separate bowl, combine the flour and baking powder. Alternately add the flour mixture and the milk into the batter, mixing until just combined. Spread the batter thinly onto a baking sheet lined with parchment paper. Step 2: Make the Meringue & Bake Whip the egg whites until foamy. Gradually add the sugar while whipping until the meringue forms stiff, glossy peaks. Gently spread the meringue evenly over the sponge cake batter. Bake in a preheated oven at 175°C (350°F) for about 20–25 minutes until the meringue is golden brown. Let it cool completely. Step 3: Assemble the Cake Once the cake has cooled, cut it in half with a sharp knife. Whip the heavy cream with sugar to taste. Spread the whipped cream and your choice of fruits over one half of the cake. Gently place the other half on top (meringue side up) to finish. Enjoy!
