Today’s full shift POV cooking video starts with breakfast service, then moves into mise en place and lunch service — where I made a homemade chicken “döner kebab” special from scratch. This is not a traditional takeaway-shop döner method, but it is a version I used to make years ago in the kitchen, sometimes with lamb and sometimes with chicken. I haven’t made it for a long time because it is very time-consuming, and these days we normally buy this type of product in. But because we had a full team on this shift, I finally had the chance to make it again. For the chicken döner mix I used chicken thigh, shawarma seasoning, Happy Chef/Kucharek, salt, pepper, garlic powder, onion powder, harissa spice mix, Cajun seasoning, turmeric, yoghurt, and panko breadcrumbs. The mix was minced, half of it was minced again, then everything was combined, rolled out between baking parchment, baked until cooked but not dry, finished on the griddle for colour and smoky flavour, then sliced into döner-style shavings. It is not “proper” traditional döner, but with the equipment we have in a staff canteen kitchen, this method gives a pretty impressive result — and it tasted extremely good.
