25. NAKJI BOKKEUM Nakji-bokkeum is a Korean spicy octopus stir-fry, that uses nakji, also known as small octopus. The most important thing to know in making nakji-bokkeum is to use high heat when you’re stir-frying it. Using high heat keeps naomi from releasing extra moisture and keeps the vegetables crunchy. Gochujang and chili powder give a nice spiciness and sweetness to the sauce, while soy sauce and vegetable umami gives out a savory flavor.
