Salade Frisée aux Lardons

A healthy-ish French bistro salad of curly endive ("Frisée"), crisp bacon lardons, and a poached egg. The Frisée is dressed in garlicky Dijon vinaigrette. Ingredients for 2 generous servings Frisée - a big handful for each serving Thick-cut bacon - 2 slices or about 3 ounces 2 Poached eggs For the Dijon Vinaigrette: Dijon mustard - 2 teaspoons Red wine vinegar - 2 teaspoons Grated garlic (or, use garlic paste) - 1/2 teaspoon Extra virgin olive oil - 3 tablespoons Salt and black pepper to taste
