This recipe is our family favorite, and the best part? It’s completely universal. If you don't have pumpkin on hand, you can swap it for 2 cups of mashed bananas or zucchini and it comes out perfect every time. Comment below: Do you prefer your pumpkin bread with chocolate chips, nuts, or plain? 📋 THE RECIPE ⏱️ Prep time: 20 mins 🔥 Bake time: 70–80 mins 🍞 Yield: 1 large loaf (or 2 small loaves) 🥣 DRY INGREDIENTS: • 2 cups All-purpose flour • 1 tsp Baking soda • ½ tsp Baking powder • ½ tsp Salt • 1 tsp Ground cinnamon • 1/2 tsp Ground cloves • 1/2 tsp Ground nutmeg (Dad's note: You can swap the cloves and nutmeg for 1 tsp of Pumpkin Pie Spice!) 🥚 WET INGREDIENTS: • ¾ cup (1½ sticks) Unsalted butter, softened • 2 cups Sugar • 2 Large eggs • 1 can (15 oz) 100% Pure pumpkin puree 🍫 MIX-INS (optional): • 1 cup Semi-sweet chocolate chips (and/or chopped nuts) 🧼 STEP-BY-STEP INSTRUCTIONS: PREP THE PAN: Preheat your oven to 325°F. Lightly spray a large loaf pan with cooking spray (or butter), dust the inside with a little flour, and tap out the excess. WHISK DRY MIX: In a medium bowl, combine the flour, salt, baking soda, baking powder, and all your spices. Whisk until well blended and set aside. CREAM BUTTER & SUGAR: In a large bowl (or stand mixer), beat the softened butter and sugar on medium speed. Add the eggs one at a time, beating well after each. Keep mixing for a few minutes until it's super light and fluffy, then mix in the pumpkin puree. COMBINE: Turn the mixer to low speed and slowly add the dry ingredients until combined. Add chocolate chips and/or nuts if you like. BAKE: Pour the batter into your pan and bake at 325°F for 65 to 75 minutes. Test the middle with a toothpick—if it's still sticky, pop it back in for another 10 minutes until it comes out clean.
