Ingredients 2 cups millet grains (or millet flour) 1 thumb-sized ginger 1 onion (small) 2-4 fresh chillies (adjust to taste) ½ teaspoon cloves (optional) 4 cups water Selim pepper Black pepper Pinch of salt Preparation Wash the millet thoroughly. Blend the millet, ginger, selim peper, chillies, cloves, and water until smooth Strain, drain excess water. For a smoother mixture Leave mixture to settle and drain excess water. Leave to ferment overnight (optional for authentic flavour). Strain if desired for a smoother texture. Pour into a pot and cook over medium heat, stirring continuously to prevent lumps. Add water as needed until you achieve a smooth porridge consistency. Add a pinch of salt and simmer for 10-15 minutes.
