We Turned Sugar into a Light Source!
Today we show you how to make rock candy... with a twist. Rock Candy Highlights: The best ratio of sugar to water is 3 parts sugar to 1 part water BY WEIGHT. This will produce good size crystals in 3-4 days. A lower proportion of sugar, such as 2.5 parts sugar to 1 part water will produce larger crystals, but will need 7-10 days for complete growth. A higher proportion of sugar, such as 3.5 parts sugar to 1 part water will produce small crystals in as little as 36 hours. If adding color, use liquid food coloring @ 5 ml. or 1 teaspoon per 100 grams of water. If adding flavor such as lemon oil, use 1.25 ml. or 1/4 teaspoon per 100 grams of water. Orange oil or vanilla extract will need 2.5 ml. or 1/2 teaspoon per 100 grams of water. If using Worcestershire sauce, REPLACE 1 tablespoon (15ml.) of the 100 grams of water with one tablespoon of the sauce. In all cases, use less rather than more because the oils interfere with the crystallization process. If you want to try the fluorescent dyes; Methyl salicylate is basically liquid aspirin. Its solubility in water is very low @ approximately 500 mg. per liter. This is as potent as two adult aspirin. In 100 ml. of water, this is a small dose and then only a small fraction of that ends up in the rock candy. But if you have an allergy to aspirin or medical conditions where you should avoid aspirin, are nursing or for infants, this would be a bad choice. Sodium fluorescein works well at 50 mg per 100 grams of water. All these above additions should be added as you begin to heat the water. The hot sugar syrup is dangerously hot! Be careful. Allow the sugar syrup to cool to approximately 50 degrees C° before placing the sugar coated stick into the container. Good luck!
