Arancini Italianos (Bolas de arroz con panceta y mozzarella)

Ingredients: 1 tablespoon olive oil 1 tablespoon butter 1/2 medium onion finely chopped 150 grams of bacon / bacon 1 cups of jasmine rice without rinsing 1/2 cup chardonnay (or any dry white wine) 2 cups hot chicken or vegetable broth 1/2 cup frozen peas / peas 1/2 cup of grated Parmesan cheese 12 cubes of mozzarella cheese For breading / frying: 1 cup all-purpose flour 2 large eggs beaten with a fork 1 cups breadcrumbs Oil for frying (sunflower, corn, canola) 1 tbsp dehydrated parsley 1 tbsp dehydrated garlic preparation: 1. Brown the bacon / bacon in a skillet. 2. In a saucepan place the oil, butter and chopped onion. Sauté until tender. Add the rice and seal it. 3. Add the white wine and cook until it has evaporated. Add the bacon then add the hot broth. Cover and simmer until liquid is absorbed. 4. Add the peas, cover and cook 2 more. 5. Turn off the heat and add the Parmesan, mix until everything is integrated and let cool. 6. Form rice balls with your hands moistened in water. Fill each ball with a cube of mozzarella cheese and squeeze with your hands to enclose the cheese and it is a compact ball. 7. Take the balls to cool for about 20/30 minutes. 8. Pass the arancinis first in the flour, then the egg beaten with garlic, parsley and finally in the breadcrumbs. 9. Heat the oil in a saucepan over medium heat and fry the arancinis, turning them so that all sides are golden brown. 10. Place the rice balls on a kitchen or absorbent paper.
