Wusthof Restoration
My favorite Wusthof Santoku was damaged after a guest put it in the dishwasher which is a huge no-no. I contemplated giving it to Goodwill but the steel and balance are incredible and decided to restore it for use. The new handle is red oak and was fastened with brass pins and a dowel. The epoxy will help keep it together and keep water from working between the tang and new handle. In a world of excess waste and planned obsolescence, it felt good to salvage something of value.
