When I think about the chefs who have shaped the way I cook and see food, Roy Choi is right up there in my Mount Rushmore. He’s not just a pioneer of Korean cuisine in the United States; he’s one of the key voices behind modern fusion cooking, making it approachable, craveable, and deeply rooted in both culture and creativity. Roy introduced the world to a new kind of street food when he launched his Kogi BBQ truck in Los Angeles back in 2008. That truck wasn’t just selling food, it was sharing a movement. Roy’s genius wasn’t just about crossing flavor borders; it was about democratizing food and showing that gourmet-level taste could be accessible to everyone on the street. His inventive mash-up of marinated bulgogi or spicy pork folded into warm corn tortillas set the stage for the nationwide emergence of Korean-Mexican fusion.
