It doesn't require any pasta, is easy to prepare, and is so juicy that it's always a hit every time I make it. Faux Zucchini and Minced Beef Lasagna 🛒 Ingredients (4 large servings) (30 x 20 cm / 11.8 x 7.8 in) dish: 🔸 250 g minced beef (1/2 lb) 🔹 250 g minced pork (1/2 lb) 🔸 1 onion 🔹 2 small carrots 🔸 1 celery stalk 🔹 400 g crushed tomatoes (2 cups) 🔸 125 ml red wine (1/2 cup) 🔹 200 ml vegetable broth (or water) (1 cup) 🔸 100 ml milk (1/2 cup) 🔹 1 bay leaf 🔸 900 g zucchini (1 lb / 2 large) 🔹 Grated cheese for gratin (make sure it's tasty, I used grana) Padano) 🔸 Salt 🔹 Pepper 🔸 4 tablespoons extra virgin olive oil (3 tbsp) Bechamel sauce: 🔸 600 ml milk (2 1/2 cups) 🔹 45 g butter (3 1/2 tbsp) 🔸 45 g flour (5 tbsp) 🔹 Salt 🔸 Pepper 🔹 A pinch of nutmeg (1/4 tsp) 🍳 Zucchini Lasagna with Minced Beef Recipe, Step by Step: 1️⃣ Wash and dry the zucchini. Remove the ends and slice them thinly using a mandoline (I make them 3 mm / 0.11 inches thick). Cook them on both sides on a griddle brushed with oil, season with a little salt. Set aside. 2️⃣ Finely chop the carrot, celery, and onion. In a large skillet, add the olive oil and, when hot, add the vegetables along with a little salt. Cook over medium-low heat until well-sautéed. 3️⃣ Increase the heat and add the ground beef. Sauté it. When it's cooked, season with salt and pepper to taste. 4️⃣ Pour in the red wine and let the alcohol evaporate for a couple of minutes. Then, add the tomato, broth, milk, and bay leaf. Mix everything until combined. Cover with a lid and simmer over low heat until all the broth has evaporated (about 45 minutes). Stir occasionally to prevent it from sticking to the bottom of the pan. At the end of cooking, adjust the salt if necessary. 5️⃣ Prepare the béchamel. In a saucepan over low heat, place the butter. Once melted, add the flour and cook, stirring constantly, for 2 minutes. Pour in the hot milk and continue stirring until thickened. Season with salt and pepper and a pinch of nutmeg. 6️⃣ In a baking dish, place a base of béchamel sauce. Then, cover with a layer of zucchini slices. Distribute ⅓ of the meat. Then, add a couple of tablespoons of béchamel sauce. Repeat these steps two more times (this will make three layers of meat and four layers of zucchini). Pour the remaining béchamel sauce over the top and sprinkle the surface with grated cheese. 7️⃣ Bake in the oven, preheated to 200°C (390°F), top only, until the top is browned (about 10-15 minutes).
