La tarta que hoy os traigo, Tarta Capuchina, merece todos y cada uno de los halagos que recibe. Debo hacer una confesión... Nunca antes había probado esta tarta. La he visto en diversas ocasiones, pero jamás había tenido el placer de disfrutarla. Es un bocado absolutamente exquisito, desde la textura, consistencia, sabor, jugosidad... Me resulta absolutamente increíble lograr un resultado tan sensacional con tan pocos ingredientes. Es uno de los dulces tradicionales confeccionados en los conventos de clausura, como su nombre indica. Su denominación alude a las monjas capuchinas, pertenecientes a la Orden de las Clarisas Capuchinas, fundada por Santa Clara. Este postre es un bizcocho elaborado exclusivamente con yemas y generosamente endulzado con almíbar. La decoración consta de yema pastelera y merengue italiano de café. Las monjas capuchinas, oficialmente conocidas como Hermanas Clarisas Capuchinas, tienen su origen en la Edad Media, aunque no llegaron a España hasta finales del siglo XVI, cuando comenzaron a fundar sus monasterios. Como monjas de clausura, tenían prohibida la salida del convento y se dedicaban a la vida contemplativa, dividiendo su tiempo entre la oración y el trabajo. Una parte fundamental de estas labores era la elaboración de pasteles, con los que ayudaban a la economía de la hermandad y enseñaban un oficio a niñas huérfanas o mujeres con problemas. Tradicionalmente, además del bordado y la costura, uno de esos oficios era la repostería, cuyos productos se vendían a través de los tornos de los conventos. It is an absolutely exquisite bite, from the texture, consistency, flavor, moistness.... I find it absolutely incredible to achieve such a sensational result with so few ingredients. It's one of the traditional sweets made in the cloistered convents, as its name suggests. Its name refers to the Capuchin nuns, belonging to the Order of the Capuchin Poor Clares, founded by Saint Clare. This dessert is a sponge cake made exclusively with egg yolks and generously sweetened with syrup. The decoration consists of yolk pastry and Italian coffee meringue. The Capuchin nuns, officially known as "Hermanas Clarisas Capuchinas", originated in the Middle Ages, although they did not arrive in Spain until the end of the 16th century, when they began to found their monasteries. As cloistered nuns, they were forbidden to leave the convent and dedicated themselves to a contemplative life, dividing their time between prayer and work. A fundamental part of this work was the elaboration of cakes, with which they helped the economy of the sisterhood and taught a trade to orphan girls or women with problems. Traditionally, in addition to embroidery and sewing, one of these trades was confectionery, whose products were sold through the lathes of the convents.
