We will be accompanied by a significant representation of ranchers from Guatemala and Nicaragua who have come to visit this important cattle ranch to learn about genetic improvement and the biotechnologies in which Hacienda San Rafael is a pioneer in our country. The cow, in the case of the female, or the bull, in the case of the male (Bos primigenius taurus), is an artiodactyl mammal of the Bovidae family. The scientific name is the one assigned to the European and North Asian domestic cattle, a group of domestic bovids descended from the subspecies of the wild Eurasian aurochs known as Bos primigenius primigenius. While Bos primigenius indicus refers to zebus and other domestic cattle breeds originating from the same stock and descended from the wild aurochs subspecies of Southeast Asia, called Bos primigenius namadicus. This is a large, robustly bodied ruminant mammal, measuring approximately 120–150 cm in height and weighing an average of 600–800 kg. Domesticated approximately 10,000 years ago in the Middle East, livestock farming subsequently developed progressively throughout the world. Their initial uses were for work and the production of meat and milk, in addition to the use of horns, hides, and excrement as fertilizer or fuel. They are also still used in bullfighting in some countries. The breeding and use of these animals by humans is known as cattle farming. In 2011, the global cattle herd exceeded 1.3 billion head. In addition to the breeds or varieties themselves, various forms of individual classification are used, such as the arrangement and shape of the antlers, the coat color, or their productive capacities.
