Such a delicate dish, Scallops known in europe as cocquilles Saint jacques. In this video recipe I will show you how to clean and prepare these scallops. Coquilles Appetizer Ingredients: 4 coquilles in the shell fresh chillipepper flakes pepper and salt fresh chives chopped fine 2 tablespoons lime juice 4 tablespoons olive oil pepper and salt to taste How To clean the coquilles: cut away the sphincter spoon out the scallop clean the scallop clean the shell How To: prepare the vinaigrette by mixing the, olive oil, lime juice, chillipepper flakes and chives clean out the shells and clean the coquilles Sprinkle the coquilles with olive oil pepper and salt and grill them Place them back in the shell, place the shells on the grill and spinkle them with vinaigrette.
