INGREDIENTS Grilled Salmon 4 salmon fillets with skin Salt to taste Black pepper to taste Olive oil to taste Moroccan Couscous 2 cups of Moroccan couscous 2 cups of boiling water 1 chopped red onion 1 diced carrot 1 chopped zucchini A quarter cup of black raisins Half a cup of halved grape tomatoes Juice of 1 lemon Chopped parsley to taste Chopped mint to taste Olive oil to taste Salt to taste Black pepper to taste PREPARATION METHOD Grilled Salmon Heat a thick-bottomed, non-stick frying pan. Meanwhile, season the fillets with salt and black pepper to taste. Drizzle olive oil in a skillet and place the fillets skin-side down. Let them brown well, then flip to quickly sear the other side, keeping the center of the salmon slightly raw and crispy on the outside. Serve while still hot. Moroccan Couscous Place the couscous in a bowl and season with salt, then add the boiling water. Cover and let sit for 5 minutes. Fluff the couscous with a fork. Add the tomatoes, zucchini, carrot, onion, parsley, mint, raisins, and lemon juice. Mix well and season with salt and pepper to taste.
